TIMBERS RESORTS UNVEILS THE TRUFFLE PIG AT ONE STEAMBOAT PLACE
“Fresh, Local and Original” Slopeside Restaurant Opens to the Public

STEAMBOAT SPRINGS, COLO. (June 24, 2010) — Timbers Resorts is pleased to announce that the Truffle Pig restaurant at One Steamboat Place will open on June 24, 2010 in partnership with owner David Jones, a well-known St. Louis restaurateur and managed by Lance Thompson, Director of Operations of Timbers Resorts.
“We’re thrilled to bring this exciting restaurant to the residents of Steamboat Springs,” said David Jones.  “From the moment we met with Timbers Resorts and heard their vision of this slopeside dining opportunity, we knew we had to be a part of it. We believe the ideal location, attractive menu and overall concept will be well-received by One Steamboat Place owners and Steamboat locals and guests.”
Situated at the base of Mt. Werner in Steamboat Springs, Colorado, the Truffle Pig will exude the “rustic elegance” ambiance found at One Steamboat Place, a one-of-a-kind residential resort developed by Timbers Resorts which opened in January 2010, offering convenient slopeside dining for the Steamboat community.  Comfortable custom furnishings complemented by vintage barn wood floors and an inviting outdoor fire pit will make the Truffle Pig a place where diners can unwind, reconnect and celebrate at the mountain’s edge.
Executive Chef Ezra Duker joins the Truffle Pig from the Urban Farmer at the Nines Hotel in Portland and will oversee the menu of seasonally inspired cuisine.  Chef Duker places an emphasis on simple, straightforward preparation utilizing the very best ingredients the Yampa Valley has to offer as well as sourcing key items from the best places around the globe.  His vast array of culinary experience includes Chef de Partie at the renowned French Laundry, studying various styles of wine production at The Napa Valley Reserve’s cellar and knowledge of farm-to-table practices from the progressive Noble Rot Wine Bar in Portland.
The restaurant will feature daily lunch and dinner menus, Thursday evening Chef’s Farm Fresh Menu with ingredients sourced from the weekly farmers market on the One Steamboat Place plaza, and signature “Forever” specials.  Micro brews and unique artisanal cocktails will also be available. The wine list is being carefully crafted by General Manager, Justin Jelinek, who joins the Truffle Pig after serving as Wine Director and General Manager of PlumpJack’s Squaw Valley Inn. The wine list will include unique wines from small producers from around the world with an emphasis on marrying value and quality.
Lunch specialties include starters like the Baby Beet Salad with Asian Pear, Mizuna, Candied Hazelnuts and Coriander Beet Reduction, a selection of flatbreads ranging from Roast Garlic and Good Olive Oil to Foraged Mushroom with Confit Shallots. Specialties on the lunch menu include Wild Pacific Salmon with Manila Clams, Fava Beans, Young Leeks, Fennel and Tarragon, a French Onion Dip, with Beef Short Rib, Caramelized Onion Compote & Gruyere Cheese and Au Jus. Standouts from the dinner menu include Day Boat Scallops with Cherry Tomatoes, Sweet Corn Pudding and Bacon, Roasted Saddle of Colorado Lamb, along with handmade pastas. One of the most anticipated dishes of the Truffle Pig is the classic presentation of Mussels and Frites served in a large cast-iron pot.
